This tasty favourite has the same hearty taste of our classic lasagne with nothing but vegetarian goodness. Roasted aubergines, courgettes and peppers are simmered in a Italian vine tomato sauce and baked between layers of pasta and creamy white sauce. The whole dish is topped with grated mozzarella. Serves 6-8 guests.
